Ciao friends! Are you a fan of the tasty, chilled Spanish soup known as gazpacho? Personally, I am a HUGE fan! Gazpacho is packed with fresh vegetables, is amazingly refreshing, and doesn’t even require cooking! For as much as I love gazpacho, however, there is one variant that I put off trying for a long time: Watermelon Gazpacho. This past Meatless Monday, I finally put myself up to the challenge and gave it a shot!
I followed, pretty much, Tyler Florence’s recipe for Watermelon Gazpacho. The result of this recipe is a soup that is refreshing with a light sweetness, a spicy kick, and an overall truly FANTASTIC depth of flavor. I am all about seasonal eating, and this is the perfect way to utilize the great summer produce we have available right now: watermelon, tomatoes, cucumber, and peppers. I was blown away by how simple and delightful this dish was and would recommend it to anyone!
It may be September now and the marketers of the world might be telling you it’s time for pumpkins and scarves; but early September is still very much summer and this recipe was born of summer! All this seasonal produce cools and hydrates the body to counterbalance the hot season. Of course, Fall is swiftly approaching; so get a watermelon and try this recipe while you can!
